Preheat the oven to 200C fan. Arrange the prosciutto (1 pack) on a parchment-lined baking sheet in a single layer. Bake for 8-10 minutes, until crispy. Allow to cool then break into shards.

Combine the preserved lemon (1), olive oil (4 tbsp) and raspberry vinegar (2 tbsp) in a jam jar, season with salt and pepper and shake vigorously.

Chop the melon (1/2) into chunks and halve the tomatoes (400 g). Toss in 2 tbsp of the dressing and arrange on a platter. Scatter over the basil (1 bunch) and tear over the burrata (1). Drizzle over some more dressing and finish with the crispy prosciutto.
