step 1
Heat 1tbsp olive oil (1 tbsp) in a large saucepan and add the beef mince (500 g). Season and cook for 8-10 mins over a medium heat until browned all over.

Stir the onions (1) and carrots (1) into the pan and cook for 8-10 minutes, until softened. Stir in the rose harissa paste (3 tbsp) and half the garlic (2 cloves) and cook, stirring, for 1 minute, until fragrant. Stir in the chopped tomatoes (400 g) and beef stock (400 ml). Bring to the boil, then reduce the heat, cover and simmer for 20 minutes until slightly thickened and saucy.

While the sauce simmers, cook the spaghetti (350 g) according to pack instructions. Drain and reserve a little of the cooking water. Stir a splash into the sauce until combined and silky.

While the pasta cooks, blitz the parsley (2 tbsp), thyme (2 sprigs), remaining garlic (2 cloves), lemon juice and zest (1/2) and remaining olive oil (5 tbsp) in a blender. Serve the pasta with the sauce spooned on top then drizzle with the herby oil and a little more harissa.
step 4 While the pasta cooks, blitz the parsley (2 tbsp), thyme (2 sprigs), remaining garlic (2 cloves), lemon juice and zest (1/2) and remaining olive oil (5 tbsp) in a blender. Serve the pasta with the sauce spooned on top then drizzle with the herby oil and a little more harissa.
