For the strawberry and basil smash. Prepare your sugar syrup by heating equal parts water and sugar (12 g), until the sugar dissolves. Allow to cool before using. Store the excess in an air-tight container in the fridge.

Add the strawberry and basil botanical drink (50 ml), lemon juice (25 ml), sugar syrup, strawberries (5) and basil leaves (7), into a cocktail shaker filled with ice and shake hard.

Double strain into a short tumbler filled with ice. Garnish with a little extra strawberry (1) and a fresh basil leaf (1).

To make the lemon and rosemary spritz, in a tall glass tumbler, add slices of Beldi preserved lemon (1), ice and lemon and rosemary botanical drink (50 ml). Top up with frizzantea brut (125 ml) and garnish with a sprig of rosemary (1 sprig).

For the low-alcohol Lost Plane. Prepare your sugar syrup by heating equal parts water and sugar (12 g), until the sugar dissolves. Allow to cool before using. Store the excess in an air-tight container in the fridge.

Add the sugar syrup, golden spiced botanical drink (25 ml), aperitivo (25 ml) and lemon juice (25 ml) to a cocktail shaker filled with ice. Shake hard. Double strain into a cocktail glass and garnish with the peel of lemon (as needed).
