Put the pears (10) and mulled wine (750 ml) into a large saucepan. Poach the pears for around 20 minutes or until they have softened, then remove them, reserving the liquid for later. Once cooled, remove the cores of the pears and slice most of them, cutting a few in half to decorate.

Whip the cream (400 ml) with the sugar (30 g) and set aside.

Add a few slices of the panettone (325 g) to the base of the serving dish. Then add the custard (500 ml), cream and pear slices, and repeat. Finish with a layer of panettone and cream.

Top with the pear halves, blond chocolate and caramelised pecans (to taste) and a drizzle of the remaining mulled wine.
