Add the courgettes (300 g) and onion slices (1) to a bowl of iced salted water and soak for 1 hour.

Put the raw apple cider vinegar (500 ml), chilli flakes (1 tsp), pink peppercorns (1 tsp), mustard seeds (1 tsp), turmeric (1 tsp), caster sugar (150 g) and sea salt (2 tbsp) into a saucepan and bring to the boil until the sugar has dissolved. Switch off the heat and allow to cool.

Drain the courgettes and onions and pat dry with kitchen towel.

Put the courgettes and onion slices into a sterilised 1 litre pickling jar or two 500ml jars, pressing down as you go, then pour over the pickling liquid. Chill in the fridge for a week, then enjoy with cheese, cold cuts or salad.
