Prepare the noodles (2 packs) according to the packet instructions, then rinse well under cold running water and set aside.

Mix the Shaoxing rice wine (4 tbsp), soy sauce (8 tbsp), sesame oil (8 tbsp), lime juice (2), garlic (2 cloves), root ginger (1 in) and brown sugar (2 tbsp) in a small bowl.

Put the cooled noodles, mango (1), cucumber (1/2), pepper (1) and lettuce (1/2) into a bowl. Pour in the dressing and mix well.

Divide between serving dishes and top each with the chillies (2), coriander (1 bunch) and sesame seeds (4 tbsp).
