Preheat the oven to 180°C with the grill on.

Lay the slices of M&S Collection baguette (1) onto a tray and lightly grill each side for 2-3 minutes or until lightly toasted on each side. Remove the tray from the oven and spread each piece with softened butter (30 g).

Spoon a little chilli jam (2 tbsp) onto each one and spread out evenly.

Place the pineapple (100 g), red onion (1/2), chilli (1/2) and coriander (2 tbsp) into a small mixing bowl. Season with salt and pepper and mix well. Pile around 1 heaped tablespoon of filling onto each slice of baguette. Sprinkle each with a small pile of cheddar cheese (100 g) and place these on a high shelf under the grill for around 6 minutes or until the cheese is golden and melted.

Carefully transfer these from the tray to a serving plate and serve immediately. You’ll want to enjoy these while they’re still warm.
