Preheat the oven to 200°C/180°C fan. Line a baking sheet with parchment.

Using a sharp knife, cut each corn on the cob (4) on the cob lengthwise, then each half into three lengthwise again.

Put the smoked paprika (1 tsp), cumin (1 tsp), oregano (1 tsp), garlic granules (1/2 tsp) and chilli flakes (1/2 tsp) into a bowl along with 3 tbsp olive oil. Coat the corn in the spice mix, then place onto the lined baking sheet.

Bake for 30 minutes, until curled and crispy. Mix the remaining paprika (1 tsp) through the mayo (2 tbsp). Top with the chopped parsley (1 handful) and serve with the lime wedges (1) and mayo.
