Steep the teabags (2) in 200ml boiling water for a few minutes. Remove the bags and stir in the sugar (2 tsp), sliced apples (1) and vanilla pod (1). Leave to cool.

Once cooled, strain to remove the apples and vanilla. Fill two tall glasses with ice, then pour over the tea. Top up with the brandy (90 ml) and soda water (500 ml), then garnish with the reserved apple.
