Preheat the oven to 200°C fan/220°C/gas mark 6 and line a 2lb loaf tin with butter and flour.

Squeeze the lemon juice (1) into the milk (200 ml) and set aside to sour a little.

Mix the flour (360 g), oats (50 g), salt (1/2 tsp) and bicarbonate of soda (1 tsp) in a bowl and make a well in the centre. Combine the beer (200 ml), honey (1 tbsp) and melted butter (40 g) in a jug.

Pour the wet mixture into the dry and stir lightly – the mixture will be wet and easy to pour. Pour the mixture into your prepared loaf tin and scatter over a few extra oats.

Bake for about 35 minutes or until the loaf sounds hollow when you tap it. Cool on a wire rack.

Beat the butter (100 g) and honey (1 tbsp) together until pale and fluffy then stir in the sea salt (to taste). Serve the honey butter with the sliced cooled soda bread.
