Using a biscuit cutter, press down into the centre of two of the bread slices to cut out a ring of bread, creating a hole in each one (keep the rings to dip into your egg later).

Heat a splash of oil in a pan over a medium-low heat and place the bread slices (4 slices) into the pan. Crack an egg (2) into each of the holes, cover the pan with a lid and fry until the eggs are cooked through and the bread golden on the underside.

Meanwhile, grill the bacon (1 pack) until crisp.

Remove the whole slices of sourdough from the pan and place onto plates. Smear the slices with butter (1 tsp) and tomato sauce (to taste), then layer with three rashers of bacon and a few sprigs of watercress (1 handful) each. Top with the egg-filled bread slices to serve.
