Add butter (25 g) to both sides of the bloomer slices (4 slices) then place under a medium grill and toast, turning once, until golden all over.

In a bowl, combine the grated cheese (200 g) with the mustard (2 tsp), beer (4 tbsp), Worcestershire sauce (2 tsp), a good twist of black pepper and paprika (1 pinch), if using. Spread generously over the toasted bloomer slices before placing under the grill until oozing and golden.

Meanwhile, heat a griddle pan over a high heat on the stove. Add butter (25 g) and season the spring onions (1 bunch) and place on the griddle. Cook for 3-4 minutes, turning occasionally, until charred and just tender.

Serve the toasts topped with the spring onions and the rest of the beer on the side.
