Heat a splash of oil in a non-stick frying pan over a medium heat.

Fry the trout (4) for around 2 minutes on each side until golden.

Add the butter (60 g) to the pan. Once it begins to foam, add the juice of half the lemon (1), then use a spoon to baste the trout in the lemon butter, then turn off the heat.

Toss the salad leaves (2) with the pesto and parmesan shavings, then divide between 4 bowls.

Serve the trout with a drizzle of the lemon butter on top of the salad and serve with the remining lemon cut into wedges.
