Preheat the oven to 220°C/200°C fan/gas mark 7. Arrange the prawns (250 g) on a baking tray and cook for 11 minutes, until golden and crisp.

Slice open the sliders (1 pack) and add them to the baking tray for the final 2 minutes of the prawn cooking time, so they lightly toast.

Meanwhile, combine the mayonnaise (5 tbsp), Cajun seasoning (2 tsp) and diced gherkins (2) in a bowl. Add 2 tsp of the brine from the jar of gherkins.

To assemble the sliders, spread with the Cajun-spiced mayonnaise, then add a small handful of lettuce (1/4) and a slice of tomato (2). Add 2-3 crispy prawns and then drizzle with the Buffalo hot sauce (as needed) and sandwich back together.
