Preheat oven to 170°C fan/190°C/gas mark 5. Grease and line two 20cm loose-bottomed sandwich tins.

In a stand mixer, beat the butter (225 g) and sugar (225 g) until pale and fluffy. Then beat in the eggs (4) slowly, followed by the passion fruit and yuzu crème (3 tbsp).

Fold in the flour (225 g) and baking powder (1 tsp), followed by the milk (2 tbsp), then divide the mix evenly between the tins and bake for 22–25 minutes, until the cakes feel springy and a skewer, when inserted, comes out clean. Allow to cool on a wire rack for 10 minutes, then remove from the tins.

To make the syrup, heat the passion fruit pulp (1) and caster sugar (2 tbsp) over a medium heat, until the sugar has dissolved. Remove from the heat and stir in the Prosecco (2 tbsp).

Spoon the syrup over the warm cakes and set aside.

To make the buttercream, beat the butter (250 g) in a stand mixer until pale. Add the icing sugar (450 g) and beat again before adding the vanilla extract (1 tsp) and passion fruit and yuzu crème (3 tbsp). Mix to combine.

Spread a thick layer of buttercream onto the bottom sponge. Top with the second sponge. Add another layer of buttercream to the top, followed by fresh passion fruit pulp (3) and meringue kisses (50 g). Serve with a can of Passion Star Martini.
