Preheat the oven to 220°C/200°C fan/gas mark 7. Combine the flour (225 g), baking powder (3 tsp), salt (1 tsp), mustard powder (1 tsp) and cayenne (1/2 tsp) in a large bowl.

Grate in the butter (50 g) then rub in with your fingertips to fully combine.

Add most of the cheese (125 g), saving a large handful to scatter on top, and stir in the chives (10 g).

Combine the milk (70 ml) and water (60 ml). Carefully mix in until the dough just comes together, being careful not to overwork.

Turn the dough out onto a lightly floured work surface and flatten it down into a 2.5cm rectangle. Use a fluted 8cm cutter to cut out 8 circles (you may need to re-roll the dough).

Place on a greaseproof-lined flat baking sheet.

Brush over the beaten egg (1), then top with a little extra grated cheese.

Bake for around 12-14 minutes, until well risen and golden. Serve with the butter (50 g), sliced cheese (50 g) and a little chutney (2 tbsp).
