The night before, pop the butter (110 g) in the freezer.

Add the flour (200 g) to a bowl with ½ tsp fine salt. Grate in the butter with a box grater, and briefly mix.

Add most of the water (6 tbsp), reserving 1 tbsp, then mix together with a knife – try not to handle the pastry too much. Add the remaining 1 tbsp water if needed to help it come together, then use your hands to briefly bring together into a ball of dough.

Wrap in clingfilm and chill for 1 hour.

Meanwhile, add the lemon oil (2 tbsp) to a large frying pan over a medium heat and add the leeks (2) and thyme leaves (5 g), reserving a few thyme leaves to garnish, with a pinch of salt. Cook for 7-8 minutes, until soft and sticky. Set aside to cool slightly.

Slice the potatoes (100 g) as thinly as you can with a sharp knife or mandoline.

Mix most of the cheddar (100 g) with the cream cheese (100 g) and most of the lemon zest (1), reserving some to garnish.

Preheat the oven to 200°C/180°C fan/gas mark 6.

Roll the pastry out on a lightly floured work surface to create a 30 x 20 cm oval shape. Transfer the pastry to a greaseproof paper-lined baking dish. Top the pastry with the cheese mix, leaving a 5cm border around the edge, followed by a layer of potatoes, and the leeks. Finish with the remaining grated cheese. Add a sprinkling of the reserved thyme leaves.

Fold the pastry up around the sides of the galette, tucking in slightly.

Transfer to the pre-heated baking sheet. Brush the edges of the pastry with the beaten egg (1).

Bake for 20-25 minutes, until the pastry is golden brown and crisp and the potatoes are tender. Finish with a scattering of fresh thyme leaves and a grating of lemon zest.
