Preheat the oven to 200°C/180°C fan/gas mark 6. Dice the tomatoes (600 g) into 2cm chunks and add to a roasting tray with the cowboy butter (80 g), 1 tbsp olive oil and the minced garlic (3 cloves). Season with a pinch of salt and roast for 25 minutes, until the tomatoes are soft.

Crush the tomatoes with the back of a wooden spoon to create a rough sauce.

Meanwhile, bring a large pan of lightly salted water to the boil. Add the spaghetti (320 g) and cook for 9-11 minutes, until al dente. Reserve 1 cup of pasta water, then drain and return the pasta to the pan.

Add the roasted tomatoes, balsamic vinegar (1 tsp) and their juices to the spaghetti along with ½ cup of pasta water. Toss until you have a thick sauce that coats the pasta.

Season the ricotta (80 g) with salt and pepper to taste. Serve the spaghetti topped with the seasoned ricotta and a generous crack of black pepper.
