Preheat the oven to 190°C/170°C fan/gas mark 5. In a medium-sized bowl, add the soy sauce (2 1/2 tbsp), honey (1 tbsp) and garlic (2 cloves) and mix until combined. Add the salmon fillets (2) and coat them in the marinade until evenly covered. Add to a baking dish lined with foil and pour over the remaining marinade. Cook in the oven for 17 minutes, until the salmon flakes easily.

Meanwhile, when the salmon has had 7 minutes, in a large saucepan, add the laksa broth (1 pouch) and bring it to a simmer. Meanwhile, cut off the ends of the choi sum (100 g) and then cut the remaining pieces in half diagonally.

Once the broth is simmering, add the grated carrot (1) and choi sum. Leave to simmer for 3-4 minutes.

Turn down the heat and add the noodles (1 pack). Top up the broth with 200ml of boiling water and cook for a further 3-4 minutes.

Divide the noodles between two bowls, then spoon over the broth. Top with the cooked salmon fillet. Garnish with chopped coriander (1 handful), a wedge of lime (1) and a drizzle of soy sauce (to taste).
