Heat a large saucepan or deep frying pan over medium heat. Add in 1 tsp of olive oil and the soffritto mix (150 g). Cook for 3-4 minutes, until softened. Add the garlic (3 cloves) and cook for 1 minute.

Tip in the chopped tomatoes (2 tins), harissa (2 tbsp), drained borlotti beans (1 tin), drained tuna chunks (2 tins) and drained antipasti mix (1 jar). Simmer for 10 minutes, until thickened. Season to taste with salt and pepper.

Meanwhile, add the chopped parsley (15 g) and vinegar (1 tbsp) to a small mixing bowl with 2 tsp of olive oil. Mix well and then season with salt and pepper.

Spoon the tuna stew into bowls and drizzle over the parsley dressing. Serve with our super seeded oaty bread (4 slices).
