To make the beetroot, feta and smoked mackerel toasts, toast the bread (2 slices) in a toaster. Blitz the beetroot (100 g), feta (25 g) and cottage cheese (1 tbsp) in a food processor until creamy and whipped. Top the toasts with the beetroot dip, slices of mackerel (100 g) and rocket (25 g).

To make the egg, greens, harissa and seeds toasts, bring a pan of water to a rolling simmer and boil the egg (2) for 6.5 minutes. Drain and plunge into cold water, then peel and halve.

In the same pan you cooked the eggs, add the cavolo nero (75 g) and cover with water and a pinch of salt. Bring to the boil then reduce the heat to a simmer and cook for 1 minute until wilted. Drain and drizzle with a little olive oil.

Swirl the harissa (1 tsp) through the ricotta (25 g). Season to taste with salt and pepper. Toast the bread (2 slices) in the toaster. Top the toasts with the ricotta harissa, the greens, the eggs and a sprinkling of mixed seeds (1 tbsp).

To make the smashed green tahini butter bean toasts, roughly mash the butter beans (100 g) with a fork.

Add the tahini (50 g), mint (10 g), parsley (10 g), basil (10 g), garlic (1 clove), lemon juice and zest (1) to a blender, reserving a few herb leaves for garnish, and blitz until smooth. Add 50ml water and blitz again until whipped and smooth. Mix with the butter beans. Season to taste with salt and pepper.

Toast the bread (2 slices) in the toaster.

Top the toasts with the butter bean smash and finish with some fresh herbs, sesame seeds (2 tsp) and a drizzle of olive oil.
