Preheat the oven to 200°C/180°C fan/gas mark 6. Bring a large saucepan filled with salted hot water to a boil. Once boiling, drop in the penne pasta (500 g) and cook for 11 minutes, until al dente, then drain.

Meanwhile, heat a large frying pan over medium heat. Add a glug of olive oil followed by the tapenade (80 g) and cook for 2 minutes.

Tip in the cherry tomatoes (1 tin), chopped tomatoes (1 tin) and tuna (2 tins) and leave to simmer for 7 minutes. Stir in the finely chopped parsley (15 g). Season to taste with salt and pepper.

Mix through the cooked pasta and add everything to a large ovenproof dish, and top with the grated cheddar (150 g).

Bake for 20 minutes, until golden and bubbling.
