Heat a splash of olive oil in a large casserole dish over a medium heat. Add the onion (1), celery (2) and carrot (2) along with a pinch of salt and cook, stirring occasionally, for 15 minutes, until soft but not brown.

Meanwhile, strip the leaves from the rosemary (1 sprig) and finely chop.

Add the garlic (3 cloves), tomato paste (1 tbsp) and chopped rosemary to the pan and cook for 2-3 minutes until fragrant.

Add the bay leaf (1), stock pot (1), tinned tomatoes (2 tins) and beans (2 tins). Re-fill one of the tins of tomatoes with water and stir this in.

Bring to a gentle boil and then turn the heat down to medium-low and simmer for 20 minutes, until the sauce has reduced (add a splash more water as needed if it looks too thick). Add the cavolo nero (200 g) in for the last 4 minutes and cook until wilted.

When the sauce has been cooking for 10 minutes, bring a pan of salted water to the boil and cook the macaroni (250 g) for 8-10 minutes until al dente.

Drain the macaroni and stir into the pot with the beans.

Spoon into bowls and top with a grating of pecorino (25 g), if you like.
