Preheat the oven to 220°C/200°C fan/gas mark 6.

In a deep dish, tip in the whole tomatoes (250 g), olives (12), capers (1 tbsp), sliced garlic (2 cloves), chopped anchovies (8), oregano (1/2 tsp) and chilli (1). Season with salt and pepper and a drizzle of extra virgin olive oil.

Mix everything together and roast for 10 minutes.

After 10 minutes, place the salmon (2) on top of the tomatoes. Bake for another 10-15 minutes until the salmon is cooked through.

Meanwhile, heat a large saucepan with water and bring to a boil. Season well with salt and cook the pasta (150 g) until al dente. Drain, reserving a cup of the pasta cooking water, and set to one side.

Remove the salmon from the tray, flake into pieces and add it back onto the tomato mix. Mix in some fresh chopped parsley (1 bunch) and a little grated Parmigiano Reggiano (to taste). Toss everything together, adding a little pasta water if needed.

Serve with an extra scattering of parsley, a spoonful of 35+ gut booster mix (2 tbsp) and a little grating of parmesan, if you like.
