Dissolve the stock pot (1) in 1.2 litres water.

Heat a splash of oil in a large casserole and add the swede (1), carrot (3), celery (3) and onion (1) along with a good pinch of salt. Sauté for 10 minutes, until softened.

Stir in the bay leaves (2), stock and soup mix (250 g). Bring to a gentle simmer, then turn the heat down, cover and cook for 15 minutes.

Stir in half the parsley (1/2 bunch) and the vinegar (1 splash), and season to taste with salt and pepper.

Place the dumpling mix (1 pack) into a bowl, stir in the remaining parsley (1/2 bunch) and a good grinding of black pepper. Add 100-120ml water to the mix to create a smooth, sticky dough. Form into six dumplings then place on top of the soup and cook for a further 25 minutes, until the dumplings have risen slightly. Serve immediately.
