In a stand mixer, cream together the butter (125 g), brown sugar (100 g) and white sugar (75 g), until well blended and pale.

Add the vanilla (1 tsp) and egg (1), and mix until combined.

Stir in the flour (300 g), baking powder (1 1/2 tsp) and bicarbonate of soda (1/2 tsp) until a dough is formed.

Add the chopped Big Daddy (1 bar) and mix until evenly combined.

Roll the mix into 8 evenly sized doughballs and freeze for at least an hour.

Preheat the oven to 180°C and line a baking tray with parchment.

Add the frozen cookie dough balls to the tray (leaving enough space for the mix to spread).

Bake for 12 minutes until golden, but still soft in the middle (they will continue to cook slightly once removed from the oven).

Cool slightly and then serve with scoop of gelato (as needed).
