Blanch the broccoli (1 head) in a large pan of boiling water for 2 minutes, then remove with a slotted spoon and set aside.

Using the same pan, add a pinch of salt to the water and cook the pasta (500 g) for a minute less than recommended on the packet instructions. Reserve a cup of the cooking water.

Meanwhile, heat a tablespoon of olive oil in a large non-stick frying pan over a medium-high heat and add the sliced fennel (1). Cook the fennel for two minutes before adding the sausage meat (400 g). Stir fry for around 5 minutes until the meat and fennel are slightly golden.

Add the garlic (2 cloves) and cook for another 2 minutes.

Add the broccoli and a splash of the pasta cooking water and cook for another 2 minutes.

Add the parmesan (20 g) and the drained pasta. Cook everything together for 1 minute, then serve with more grated parmesan and parsley (25 g) scattered on top.
