Preheat the oven to 200°C/180°C fan/gas mark 6 and grease a 25cm fluted tart case.

Add the sweet potatoes (1 pack) to a small roasting tray and sprinkle with half of the shawarma seasoning (1 tbsp). Season with salt and pepper, then drizzle with olive oil. Roast for 25 minutes, until softened, then roughly mash with a fork so they break down slightly.

Meanwhile, add a splash of oil to a large saucepan and add 1 tsp of the butter. Add the leek (1) and a pinch of salt, then cook, stirring occasionally, for 5-7 minutes, until softened. Remove from the heat and decant into a bowl and allow to cool slightly. Remove the chipolatas (1 pack) from their skins and add these to the bowl with the leeks and remaining shawarma seasoning (1 tbsp). Mix everything with clean hands until combined, then stir in the sweet potato and pine nuts (2 tbsp).

Melt the remaining butter (50 g). Place the pastry sheets (8 sheets) in the base of the tart case, brushing each with melted butter as you go, rotating so the pastry covers the base and fans out evenly around the sides.

Spoon the filling mixture into the middle of the pastry. Brushing with more butter as you go, fold up the edges across the top to cover the filling. Brush the top with more melted butter, then sprinkle with the sesame seeds (2 tbsp).

Place in the bottom of the oven and bake for 40 minutes, until golden. While still warm, drizzle with the honey (1 tbsp) and serve.
