Combine the onions (1/2), tomatoes (300 g), garlic (2 cloves), the jalapeño (1) and most of the coriander (15 g) (reserve a small handful to serve) in a bowl with the zest of the lime (1). Cut the lime in half and squeeze in the juice of one half. Season with salt and drizzle with a little olive oil.

Add the refried beans (1 tin) and kidney beans (1 tin) to a small saucepan. Stir in half of the salsa and heat through over a medium heat for 15 minutes, until reduced and thickened.

Meanwhile, warm the tortillas (1 pack) for 20 seconds on each side in a dry frying pan over a medium-high heat. Wrap in foil to keep warm as you go and set aside.

Heat a splash of oil in the same pan and fry the eggs (4) for 3-4 minutes, or until cooked to your liking. Season with salt and pepper.

Meanwhile, slice the avocado (1) and dress with the juice of the remaining lime half.

Serve the warm tortillas topped with the bean mix, the eggs, the remaining salsa and the avocado. Finish with some more fresh coriander.
