Preheat the oven to 200°C/180°C fan/gas mark 6. Add the spinach (1 bag) to a colander in the sink and pour boiling water on top to wilt. Leave to cool, then squeeze out as much moisture as possible.

Roughly chop the cooled spinach and add to a mixing bowl with the ricotta (1 tub), nutmeg (1/4 tsp) and beaten egg (1). Season to taste with salt and pepper.

Add the pancakes (1 pack) to a microwaveable plate and microwave for 2 minutes according to the pack instructions. Remove from the microwave and spread the spinach and ricotta mixture over the 6 pancakes, then roll into cigars.

Pop the stuffed pancakes into a large baking dish and top with the tomato sauce (1 jar). Tear over the mozzarella (1 pack) and bake for 25-30 minutes, until the mozzarella is golden brown.

Top with the torn basil (15 g) and serve.
