Heat the jacket potatoes (4) in the microwave for 6 minutes, according to the pack instructions.

Meanwhile, grate the lemon zest (1) into a large bowl and squeeze in half the juice. Add the mustard (2 tsp) and white wine vinegar (2 tbsp), along with a generous drizzle of olive oil. Whisk to combine, then stir in the celery (3), chicory (2 heads), apple (1) and red onion (1/4). Season with salt and pepper, then set the slaw aside.

Combine the crème fraîche (100 g) and horseradish (2 tbsp) in a bowl and squeeze in the remaining lemon juice. Add most of the chopped chives (10 g), reserving some to garnish. Break the smoked mackerel (2 packs) into flakes, discarding the skin, and gently stir in.

When the potatoes are ready, scatter the pecans (25 g) over the slaw. Serve the potatoes with the smoked mackerel mix and the celery slaw, with a scattering of chives on top.
