To make the caramelised onions, add the butter (15 g) to a large saucepan with a pinch of salt and a splash of olive oil. Add the onions (2) and cook, stirring often, for 15-20 minutes, until sticky and brown. Add the balsamic vinegar (1 tbsp) and sugar (1 tsp) and cook for a further 2-3 minutes, until caramelised.

Meanwhile, preheat the grill to medium and add the sausages (1 pack) to a foil-lined tray. Cook, turning halfway, for 22 minutes according to pack instructions, until golden brown and cooked through.

Lightly toast the posh dog buns (4) and fill with the caramelised onions, gruyere (50 g) and sausages, finishing with a squeeze of mustard (2 tbsp).
