Bring a saucepan of water to a gentle simmer. Lower in the eggs (4) and cook over a medium rolling simmer for 6.5 minutes, before plunging into cold water. Allow to cool then peel and halve.

Combine the yogurt (300 g), garlic (1 clove) and sumac (1 tsp) in a small bowl and season with salt and pepper.

Preheat the grill to medium. Drizzle the flatbreads (4) with olive oil and sprinkle over the za'atar (1 tbsp). Grill for 2-3 minutes, until golden.

Meanwhile, melt the butter (2 tbsp) in a small saucepan until it turns brown and smells nutty. Stir in the rose harissa paste (2 tsp).

Spread the yogurt into four bowls, then top each with the halved eggs and a drizzle of harissa butter. Finish with some fresh dill (10 g) and serve with the flatbreads.
