Preheat the grill to high and bring a saucepan of water to a simmer and add the vinegar (1 tbsp).

Place the kippers (1 pack) on a foil-lined tray and dot with the butter in the pack. Grill for 7-8 minutes, turning halfway, until cooked through and starting to flake.

Meanwhile, crack the eggs (2) into two small bowls. Stir the water to create a whirlpool, then carefully slide the eggs into the pan. Cook for 3-4 minutes, until cooked to your liking.

Toast the sourdough (4 slices).

Add the spinach (80 g) to a bowl, season with salt and pepper, and add 1 tbsp water. Cut along the top of the hollandaise sauce (1 pack).

Add the hollandaise and spinach to the microwave and cook for 30-45 seconds, until the hollandaise has cooked through and the spinach has wilted.

Top the sourdough with the spinach, kippers, poached eggs and hollandaise.
