Finely chop the stalks of the swiss chard (200 g) and roughly chop the leaves.

Heat a splash of oil in a medium frying pan and add the onion (1) and chard stalks with a pinch of salt. Cook, stirring, for 5-7 minutes, until soft.

Stir in the spiced ghee base paste (1) and goan curry sauce and cook for a further 2 minutes before stirring in the tomatoes (3) and coconut milk (1 tin).

Simmer for 5 minutes then stir in the chickpeas (1 jar) and chard leaves. Cook for 2 minutes, until the chard has wilted and the sauce has thickened.

Heat the rice (1 pack) in the microwave for 2 minutes, according to the pack instructions.

When the curry is almost ready, heat a splash of oil in a separate small frying pan and add the whole spices. When they sizzle and pop, pour over the curry and serve straight away with the rice. Scatter with the pomegranate seeds (2 tbsp) and crispy onions (1 tbsp).
