Add the chopped tomatoes (2 tins), onion (1), garlic (3 cloves), sugar (1 tsp), sherry vinegar (1 tsp), butter (20 g), 'nduja (2 tsp) and chickpeas (1 jar) to a large saucepan and season with salt and pepper. Bring to a gentle simmer over a medium heat and cook for 15 minutes, until reduced and thickened slightly. Taste to check you’re happy with the seasoning and acidity.

When the sauce is almost done, bring a large pan of salted water to the boil and cook the pasta (2 packs) for 4 minutes.

Remove the onion from the tomato sauce and discard (it’s given all its flavour now).

Drain the pasta with a slotted spoon and toss in the sauce, then spoon into bowls and serve straight away with a scattering of fresh basil (10 g) on top.
