Heat a large saucepan filled with hot water and bring to a boil. Season generously with salt and add a drizzle of olive oil. Boil the pasta (320 g) for 11-13 minutes, according to the packaging instructions.

Meanwhile, beat the egg yolks (3) in a medium bowl (keep the egg whites for another recipe) and mix in the grated parmesan (50 g) and pecorino (50 g), season generously with black pepper (as needed).

Heat the garlic oil (1/2 tbsp) in a large frying pan, add the pancetta (1 pack) and fry for 2-3 minutes according to pack instructions.

Once the pasta and pancetta are cooked, transfer the pasta to the pancetta pan using tongs or a slotted spoon, reserving the pasta water.

Add 2 tbsp of pasta water to the egg mix and whisk together until you have a slightly runny consistency. Remove the pan from the heat and add the egg mix, using tongs to quickly toss together until smooth and well combined. Add more pasta water if the mix begins to scramble.

Once the pasta is coated, add it back to the heat and cook for a further minute to heat through. Serve immediately with some extra parmesan and black pepper.
