step 1
Preheat the oven to 220°C/200°C fan/gas mark 7. Add the spinach (1 bag) to a heatproof bowl, pour over boiling water and leave to sit for 2 minutes. Drain and leave to cool.
step 2
Meanwhile, heat a large, oven-proof frying pan (30cm) over a medium heat. Pour in the tomato sauce (1 jar) and chopped tomatoes (1 tin) and simmer until bubbling.
step 3
Squeeze as much moisture as you can out of the spinach and add to a mixing bowl with the ricotta (250 g). Season to taste with plenty of salt and pepper.
step 4
Break the lasagne sheets (330 g) into small pieces and add to the tomato sauce. Remove from the heat and dollop over the ricotta and spinach mixture, mixing slightly. Pour over the four-cheese sauce (1 tub) and top with the grated parmesan (80 g). Season with an extra pinch of salt and pepper.
step 5
Pop into the oven and bake for 45 minutes, until golden brown.
