step 1
Peel the celeriac (1) and cut into thin matchsticks or use a julienne peeler to peel into strips. Pop into a bowl as you go, squeezing over the lemon juice (1/2) to prevent discolouration. Add the mayonnaise (7 tbsp), mustard (2 tbsp), chives (10 g) and parsley (10 g) to a mixing bowl. Season with salt and pepper and then add the celeriac and mix. Set aside.

Heat a large frying pan over a medium-high heat and add a generous glug of neutral oil. Once hot, lower the escalopes (1 pack) into the oil and cook for 2 minutes on each side, until golden brown and cooked through.

Serve the escalopes with the remoulade and a handful of watercress (1 handful).
