Preheat the oven to 220°C/200°C fan/gas mark 7. Heat a large oven-proof frying pan over a medium-high heat with 1 tbsp olive oil. Add the chicken thighs (500 g), flat-side down, with the lemons (1) and cook for 7 minutes undisturbed. Season with salt and pepper. Flip and cook for another 5 minutes, until golden. Remove the chicken and lemons from the pan and set aside.

Add the olives (100 g), orzo (300 g), Greek seasoning (2 tbsp), tomatoes (150 g), pepper (1) and chicken stock (500 ml) to the pan. Mix and then top with the chicken, lemons and halloumi (100 g). Bake in the oven for 30 minutes, until the orzo is tender, and the chicken is cooked through.

Serve with a scattering of basil (1 handful) on top.
