step 1
Preheat the oven to 220°C/200°C fan/gas mark 7. Heat a large ovenproof pan over medium-high heat, then add half the butter (30 g) and the leeks (6). Cook for 5-7 minutes, until softened. Season with a pinch of salt.
step 2
Add the butter beans (2 tins) (and their liquid) to the pan, followed by the vintage cheddar cheese sauce (1 pack) and stock pot (1). Simmer together for 5 minutes, until thickened slightly.
step 3
Season with salt and pepper and stir through half the parsley (25 g). Top with the smoked haddock chunks (4) and mix gently into the butter beans. Simmer together for 5 minutes.
step 4
In another frying pan, add the remaining butter (30 g) and cook until melted. Toss through the breadcrumbs (50 g) and remaining parsley. Season with salt and pepper.
step 5
Top the butter bean mixture with the buttery breadcrumbs, then transfer to the oven and bake for 25 minutes, until the top is golden brown and bubbling and the haddock is cooked through.
