step 1
Drain the tofu (300 g) and pat dry with a paper towel. Slice the tofu into 8 slabs (don’t worry if they break). Add to a plate with the cornflour (4 tbsp) and a pinch of salt and gently toss the tofu in the cornflour until coated all over.
step 2
Heat 3 tbsp of neutral oil in a large frying pan over a medium-high heat. Add the tofu and cook for 4 minutes on each side, until golden and crisp.
step 3
Transfer to a plate lined with kitchen paper, to drain the excess oil.
step 4
Steam the bao buns (8) in the microwave according to the packaging instructions, for 1-2 minutes.
step 5
Return the pan to the heat, add the Korean chilli marinade (100 g) and heat until piping hot. Meanwhile, make the slaw. Add the white cabbage (1/4), baby carrots (2), edamame beans (80 g), M&S nuoc cham dipping sauce (2 tbsp) and lime juice (1) to a mixing bowl and season to taste with salt and pepper.
step 6
Pack the steamed buns with the slaw and crisp tofu, drizzle over the Korean chilli marinade, and scatter the sesame seeds (2 tsp) on top. Serve with extra marinade for dipping.
