Cook the bubble and squeak cakes (4) according to pack instructions.

Meanwhile, smash the avocado (1) and stir through the spring onion (1) and coriander (1 handful). Season with salt, pepper and a drizzle of olive oil. Set aside.

Heat a drizzle of olive oil in a pan and cook the halloumi (125 g) until golden. Set aside and keep warm.

Fry or poach your eggs (4) until cooked to your liking. Top the bubble and squeak cakes with the smashed avocado, chilli jam (to taste), halloumi, eggs of your choice and serve.
