Melt a large knob of butter (1 knob) in a saucepan over a medium heat and then add the onion (1/2) and garlic (3 cloves). Season with salt and pepper and cook until slightly softened.

Add the mushrooms (1.2 kg) and reduce the heat. Cook until the mushrooms are soft and lightly caramelised.

Bring a large saucepan of water to the boil and lightly poach 4 eggs (4) for 2 minutes (you may want to do this in batches) and then plunge them into a bowl of ice water. Pat dry with kitchen roll.

Beat the remaining eggs (2) in a bowl and then gently coat the poached eggs in the flour (100 g), followed by the egg and then the breadcrumbs (100 g). Fry each egg in a deep pan filled with hot vegetable oil for 1-2 minutes, until golden.

Toast the bread (8 slices). Top the bread with mushrooms, followed by a sprinkling of parsley (1 handful), salt and pepper. Add the eggs and serve.
