Cut the piel de sapo melon (1/4), honeydew melon (1/4) and watermelon (1/2) into large slices, leaving the skins intact.

Mix together the lime (1) zest, honey (3 tbsp) and olive oil (2 tbsp). Season with salt and pepper. Brush the slices of melon with the honey mix and cook for 2-3 minutes on each side either on a barbecue or in a griddle pan until lightly coloured.

Add the rocket (60 g) to a serving platter and top with the melon, crumbled feta (100 g), mint (1 handful), a generous drizzle of balsamic glaze (to taste) and some pepper.
