This easy one-pot gnocchi is sure to become your new family favourite. Gnocchi is baked in a rich tomato sauce with an oozy mozzarella and parmesan topping, so it goes crispy on top but stays fluffy in the middle.

step 1
Heat a splash of olive oil in a large ovenproof pot over a medium heat. Add the frozen soffritto (200 g) and sauté for 5-10 minutes, until softened. Add the chopped garlic (4 cloves) and cook for a further 2 minutes, until fragrant.
step 2
Add the M&S Italian chopped tomatoes (2 tins) and sugar (1 tsp) and season with salt and pepper. Bring to the boil, then turn down to a simmer and cook for 30 minutes, until reduced. Taste to check the seasoning and stir in the basil (1 bunch), reserving a few leaves to garnish.
step 3
Preheat the oven to 180°C fan. Stir the gnocchi (500 g) into the sauce. Tear over the mozzarella (1) and grate over the parmesan (50 g). Bake for 20 minutes, until the mozzarella is bubbling and golden. Finish by scattering over the reserved basil leaves.
