Preheat the oven to 180°C fan. Mix the fajita seasoning (3 tbsp) with the butter (50 g) and rub all over the whole chicken (1). Nestle into a tin and roast for 20 minutes before reducing the heat to 160°C fan, basting and scattering in the red onion (1) and red pepper (3). Season the veg and cook for another 1 hour 10 minutes until the chicken is cooked through and the juices run clear, basting occasionally.

Remove the chicken from the oven and cover before setting aside to rest. Toss the wrap triangles (4) with the remaining fajita seasoning (1 tsp) and vegetable oil (1 tbsp), spread across two baking trays and cook for 12-15 minutes, until crunchy and golden.

Stir the juice and zest (1/2) into the soured cream (150 ml). Serve the chicken with the crunchy tortilla chips, lime, soured cream, tomato salsa (1 tub) and extra lime wedges (as needed), scattering everything with the coriander (as needed).

To make the leftover chicken fajita sarnie, heat the vegetable oil (1 tbsp) in a frying pan over a medium-high heat and cook 200g of leftover chicken for 2-3 minutes. Stir in the 150g of leftover roasted vegetables and cook for another minute. Set aside.

Split the rolls (4) and spread the bottom halves with the sour cream and chive dip (4 tbsp). Scatter on the rocket (60 g), chicken mix and finally the roasted chilli cheddar (40 g) to serve.
