step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Mash 150g of the M&S Collection sapphire raspberries (150 g) in a bowl with most of the mint (1 handful), most of the lemon zest (1/2) and a squeeze of the juice until the berries have broken down. Set aside.

Put the peaches (4) cut side up onto a baking tray and drizzle with the M&S pure honey (1 tsp). Roast for 15-20 minutes, until softened and starting to char.

To serve, spoon the raspberry sauce into 4 platters or shallow bowls. Top with the charred peaches and the remaining M&S Collection sapphire raspberries (50 g) mint and lemon zest. Serve each with a spoonful of Greek yogurt (to taste).
