Toast the sourdough (3 slices), then soak one of the slices in the turkey gravy (150 ml). Preheat the oven to 180°C/160°C fan.

Add a splash of the gravy to the mayonnaise (2 tbsp) and mix to combine. Spread this on the other two slices of sourdough slices.

Build your sandwich by layering up the turkey slices (2 slices), pigs in blankets (4), brussels sprouts (1 handful), cranberry sauce (1 tbsp), chutney (1 tbsp) and cheese (2 slices) on either side of the gravy-soaked sourdough, all sandwiched between the two gravy mayonnaise-covered slices.

Wrap the sandwich tightly in foil. Place on a baking tray and cook in the oven for 10-15 minutes.

Top with gherkins (2) and cut in half to serve.
