Cut the cod (1 pack) into 5cm pieces, pat dry and toss with the turmeric (1 tsp) and ¼ tsp salt. Set aside for 15 minutes.

Meanwhile, to make the salad, combine the soy sauce (1/4 tbsp), lime juice (1), caster sugar (2 tsp) and red chilli (1) in a small bowl until the sugar has dissolved. Toss the dressing with the carrot (1), mango (1/4), radish (10) and red cabbage (1/2). Set aside.

Heat a splash of rapeseed oil in a non-stick frying pan over a medium heat and fry the shallots (4) until golden. Add the ginger (1 piece) and cook for a minute or so until fragrant. Tip in the cod pieces (add a bit more oil as needed) and fry for 2 minutes on each side, until golden on the outside and cooked through.
